Kamut Recipe


Kamut Recipe
Ingredients
3/4 cup kamut berries, rinsed
2 cups boiling water
2 tablespoons olive oil
2 cups onion, finely chopped
1 cup carrot, finely chopped
3/4 cup fresh parsley, chopped
1/2 cup celery, thinly sliced
1 tablespoon fresh tarragon, chopped
2 teaspoons fresh thyme, chopped
2 garlic cloves, minced
4 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
2 bay leaves
1/3 cup dried lentils
1/4 teaspoon black pepper
1 (15-ounce) can chickpeas (garbanzo beans), rinsed and drained
2 cooked chicken breasts, cut in bite size chunks
2 teaspoons celery leaves, chopped (optional)

Preparation

1. In a small bowl,  place the Kamut and the water. Heat oil in a stockpot over medium heat.
2. Add onion, carrots, parsley, celery, tarragon, and thyme; cook 10 minutes, stirring occasionally.
3. Add garlic; cook 2 minutes, stirring often.
4. Add kamut, broth, and bay leaves to onion mixture; bring to a boil. Cover, reduce heat, and simmer 30 minutes.
5. Add lentils and pepper; cook 20 minutes or until lentils are tender.
6. Discard bay leaves. Add chickpeas and chicken; simmer 2 minutes. Garnish with celery leaves, if desired.

Grains day 3

The one with the olives and rice-ish thing was a little discordant, but altogether average.  The one with the bacon was irresistibly awesome!!! The pad Thai-ish one was also very good and it was just the right mix of spicy and fresh. The yellowy Indian one was pretty good, though it could have used some other things to make it better.

Dream kitchen/pantry

Flour, sugar, salt, pepper,mint, chicken, steak, cutlery, pots, pans, Tupperware, brown sugar, candy, lemons, hazelnuts, ketchup, almonds, mustards, whipped cream, and RedVines.

Grain day 2

Yakisoba was very complete and sticky and delicious. The bulgar had a unique, but heated taste, one I rather liked.

Grains 1

The muffins were very tasty. I could really taste the nutmeg. The bread was just the right mix of everything. The cheddar went averagely with the bread, but the other one complimented the bread a fair bit better.

The salad worked well for the vinagrettes. Mine was the best, but it was a little bitter. One was quite mustardy and the other was very buttery.

Saladay 4

Th feta age tomato one had one flavor that was created by all the others.  The fruit salad was a little slimy and it had a strange affect in my tongue, a little tingly, but just for a moment. The seaweed-y one was good, but foreign. Mine was, of course, the best.

My Salad Recipe




Hazelnut, Green Bean, and Mint Salad with Lemon Dressing
Serves 6       Time 30 minutes

8 cups packed green beans (about 3/4 lb.), trimmed
2 tbsp. mint leaves, chopped
2 tbsp. green onion, chopped
1 tbsp. lemon zest, finely shredded
2 tsp. fresh lemon juice
1/2 tsp. salt
1/4 cup roasted hazelnut oil or extra-virgin olive oil
3/4 cup hazelnuts, toasted

1. In a 4- to 6-qt. pot over high heat, bring 3 qts. salted water to a boil. Add green beans and cook until just crisp-tender, 4 to 7 minutes. Drain in a colander and plunge beans into a bowl of ice water to cool. Drain again and set aside.
2. In a small bowl, stir together mint, green onion, lemon zest and juice, and salt. Drizzle in oil, whisking constantly.
3. In a large bowl, gently toss green beans with dressing and hazelnuts. Serve at room temperature.

Make Ahead: Up to 3 hours, at room temperature.

Salad day 3

Goat cheese pomegranate
The bread that went with it is good. The goat cheese gives off an oily solid texture, while the cranberries give it a deliciously tart aftertaste.  4 out of 5.

Barbecue and friends 
Pungent, hearty, and tingly. The BBQ chicken would seem out of place, but fits in perfectly. 3.5 out of 5.

Apple cucumber
Sweet, watery, and structured. I think that, for a relatively simple salad, it tastes pretty good. 2.9 out of 5. 

Caesar
Average, simple, and clichè. 2 out of 5.

Leek 
Slimy and refreshing. It's uniqueness is enough to make up for some of its faults. 3.7 out of 5.

Salad day2

The noodle one
It was very moist and crisp but not so flavorful, no offense.

The eggplant-spinach one
Awesome!!!!!!!¡!!!!!! The eggplant blends so well with the spinach and cheese!!!! The flavors all contribute there own unique touch to the dish! Great!!!

The Lima bean one
Wow!!!!!!!! The tomatoes are so potent and fresh! The beans give a good amount of supplement and texture to the salad. It's great!!

Unfortunately, by the time I got back from cross country, dinner was already done.  I had broccoli, quinoa, and roast chicken.  The broccoli was watery, and surprisingly good.  The quinoa was as normal quinoa; bland, basically just cool-looking rice.  The roast chicken was very succulent, not dry in the slightest. I had a leg.  It had hints of garlic, salt, pepper, the usual stuff, with a lemony aftertaste that's still in my mouth.  The skin was cooked a tad too long, I think, as it was very rough and WAY too hard.  But, all-in-all, it was a pretty good meal, all things considered. A normal, but good, meal.

Salads day 1

Green bean salad
Good. The green beans definitely ruled out any other flavors that the onions and tomatoes contributed to the dish. The dressing was minimally expressed, but the beans were so calmingly cool that it made the salad a lOt better.

Macaroni salad
The Onions didn't match well with the olives and macaroni, but the sauce was so unique it made up for it. The olives were a fine addition but the onions were off Place. Nice choice of sauce and pasta type.

Green Lettuce cucumber salad
Cucumbers= great, peppers well matched, but the lettuce was a mere mediocre addition to the more refined flavors I had come to expect by the other ingredients. Bt other than that, well done!

Iberica, quince, and cheese

Iberico,quince, and cheese: the cheese was very good, but mild and not really devoted to making a lasting impact on my taste buds. The Iberica was very sweet, but it had some issues when mixed with the cheese. The quince was very good; it had a good tart flavor that was very potent and went well with the bread.
